黑糖马来糕 Brown Sugar Ma Lai Gao (天然酵母 Natural Yeast)

黑糖马来糕
(天然酵母)







黑糖马来糕 

材料:

(A)
鸡蛋 2粒 
黑糖 80g
低筋面粉 90g
牛奶 60ml
水 20ml
盐 2g
天然酵母液种 40g

(B)
梳打粉 3g
泡打粉 3g
菜油/橄榄油 20ml

做法:

1.黑糖和水煮溶过滤和待凉备用。

2.鸡蛋和天然酵母液种混合均匀,加入牛奶拌匀,再加入低筋面粉和盐搅拌均匀。

3.将(1)倒入(2)搅拌均匀。

4.用保鲜纸盖好面糊,发酵大约2小时。

5.发酵好后,拌入材料(B),倒入蒸笼/藤篮(需铺纸)

6.以中大火蒸30分钟。

*我的藤蓝是6寸模,再铺上烘焙纸。
*拌面糊时不要过度搅拌,会影响成品的口感。

Brown Sugar Ma Lai Gao

Ingredients:

(A)
Egg 2 (110g)
Brown Sugar 80g
Low Protein Flour 90g
Milk 60ml
Water 20ml
Salt 2g
Natural Yeast Starter 40g

(B)
Baking Soda 3g
Baking Powder 3g
Vege oil / Olive oil 20ml


Method:

1.Dissolve the brown sugar with water, sifted,let it cool and set aside.

2.Egg mix with natural yeast starter, add milk, salt and low protein flour. 

3.Combine (1) and (2), mix well.

4.Cover with cling firm let it ferment for about 2 hours.

5.After 2 hours, add ingredients (B) mix well and pour the batter into a bamboo basket (with baking paper)

6.Medium fire steam for 30 minutes.

*I use 6 inches bamboo basket with baking paper.
*Do not over fold the batter. Good luck :)
