碱水糕
Alkaline Kueh
QQ的古早味碱水糕
喜欢吃甜的,配椰糖糖浆或是咖呀
而喜欢吃咸的口味可以配卤猪脚汁

待凉后,轻轻用手脱模

然后用线来切割碱水糕

蒸好后放在凉架上待凉

全部材料混合均匀后
用滤网过滤才拿去锅里煮至稀浓



材料: 

粘米粉 (在来米粉)250g
碱水 4.5ml
硼砂 2g (不放口感有差)
盐 13g
水 1125ml


做法:

1. 全部材料用搅拌器混合和搅拌均匀,过滤。

2. 以中小火煮至稀浓,要不停的搅拌。

3. 把面糊倒入8寸蒸盘里,大火蒸制20分后,再转中小火继续蒸制2小时。

4. 待凉后,取出碱水糕,盖上保鲜膜。隔天吃口感更佳。


注意
  • 用线来切割碱水糕简易又整齐
  • 硼砂可以在中药材店购买得到




Alkaline Kueh

Ingredients:

Rice Flour 250g
Alkaline Water 4.5ml
Borax 2g
Salt 13g
Water 1125ml


Method:

1. Combine and mix all the ingredients, strain. 

2. Cook the mixture over medium low heat stir constantly till thicken.

3. Pour the mixture into a 8 inches pan, steam over high heat for 20 minutes, then switch to medium low heat continue steam for another 2 hours.

4. Let it completely cool on the wire rack, then remove from the pan, cover with cling wrap. 


Tips:

  • You can use a thread to cut the Alkaline Kueh into piece, neat and easy. 
  • You can get the Borax in your nearly Chinese Medicine Shop.
