小餐包 (天然酵母)

材料:

高筋面粉 250g
天然酵母原种 50g
黄糖 15g
盐 2g
全蛋 30g
鲜奶 130g
无盐牛油 15g


做法:

1.把全部材料加入面包桶/搅拌机除了牛油,揉至光滑有薄膜
2.加入牛油,继续揉至有扩展状态,然后滚圆放入盒子里一到两倍大。
3.发酵好后,放入冰箱冷藏让面团低温发酵12-16小时。
4.隔天,让面团回温,排气,分割,滚圆。休面10分钟。
5.做自己喜欢的造型后,最后发酵至两倍大。(我用了2个小时半发酵完成)
6.刷上蛋液,放入已预热好的烤箱里以190度烘烤12-15分钟。

Ingredients:

High Protein Flour 250g
Sourdough Starter 50g
Brown sugar 15g
Salt 2g
Egg 30g
Fresh milk 130ml
Unsalted butter 15g


Method:

1.Mix everything except butter in the bread machine or mixer, knead till form a smooth & elastic dough. 

2.Add butter, continue kneading till reach window pane stage.

3.Roll into a ball shape then place in a container let it proof until double sizes then keep in fridge for cold fermentation up to 12-16 hours.

4.Next day, take the dough out from the fridge rest for 10-15mins.

5.Flatten the dough, degas, and divide 9 or 10 equal portions.

6.Roll each dough into a ball shape, rest for 10 minutes.

7.Shaping, then last proofing for double sizes. 

8.Egg brush, bake 12-15 minutes for 190 degree Celsius.
