Old ginger - 200g
Brown sugar - 500g

Method:-
1.Clean the ginger with water. Cut the ginger into small pieces.

2.Put the gingers on a pan with small fire. Fry the ginger till dry and turning into brown color. Keep stirring.
3.Add brown sugar and stir non stop. (small fire still)
4.When the brown sugar dissolve completely, switch to big fire and let it boil for about 1-2 minutes *then switch off the fire. Pour the ginger sugar batter into a mould or a tray with baking paper.
5.Remove the ginger cubes from the mold (or cut the ginger sugar while it still slightly warm) and let it cool completely then store in a tight container (best keep in the fridge)
*Tips:Take a drop of ginger sugar batter in a glass of water, the ginger sugar will immediately go into a lump. That's mean done. Switch off the fire and pour the ginger sugar batter in a mold or a square tray with baking parchment paper.
