饺子
Chinese Pork Dumplings





水餃皮
麵粉 300g
鹽 3g
水 150g


揉成糰,休息30分鐘

再揉至光滑,然后揉成長條状

切成劑子

杆平,中间厚周边薄



然后包入馅料

饺子包好后摆放在不沾布或是烘培纸上或不不粘布比较不易沾粘
吃不完的饺子,可以拿去冷冻哦
下次要吃的时候不必解冻,水滚后直接煮就可以啦



馅料

猪绞肉 350g 
高麗菜 200g 
(切细末,放半小匙鹽抓一抓,静置15分钟,脫水擠乾)
青蔥 少許
薑末 少許
胡椒粉 少許
鹽巴 半小匙
醬油 一大匙半
米酒 一小匙
麻油 一小匙
高湯或水 兩湯匙

(同一個方向攪拌至黏稠即可,放入冰箱冷藏備用)

皮:12g 
餡:15g


加入少许盐用手抓一抓,静置15分钟,再把多余的水份挤干


肉馅加入调味料同一个方向拌匀后
才加入挤干水份的高丽菜


放入冰箱冷藏备用

Chinese Pork Dumplings

Dumpling skin
Plain Flour 300g
Salt 3g
Water 150ml

Dumpling Filling
Ground pork 350g
Chinese Cabbage 200g 
(finely chopped and add 1/2 tsp of salt ,mix well and let it rest for 15 mins. Drain the cabbage by using your hand to squeeze out excess moisture.)  
Ginger (grated)
Spring onion (chopped)
White pepper 
Salt 1/2 tsp
Soy sauce 1 1/2 tbsp
Rice wine 1 tsp
Sesame oil 1 tsp
Chicken stock or water 2 tbsp

Mix evenly in one direction until you reach a sticky consistency. Chill the filling in the fridge for later use.


Method:

1. Knead the dough into a ball. Cover and let it rest about 30 mins.

2. After 30 mins, knead the dough into oblong shape, cut and divide each dough about 12g.

3. Place the dough pieces with the cut sides up or down, not the side. Press down with your palm to flatten the dough pieces into circle. Roll each piece out into a circle about 2 1/2 inches in diameter. Don't roll all the way into middle, leave the middle of the wrapper thicker than the rest. (Lightly dust some flour while rolling the dough)

4. Place a small portion (15g) of the filling into the middle of each wrapper. Wet the edges of the dumpling with water. Fold the dough over the filling into a half moon shape and pinch the edges to seal. 

5. Cook the dumplings with boiled water, stir once to prevent the dumplings stick at the bottom. When the dumplings float on top, add a little bit of water, keep boiling for another 2 to 3 mins will be ready to serve.

要做煎饺也行~一样美味喔!
锅里放少许油,排列饺子在锅里,煎至底部焦黄色,倒入面粉水(一小匙面粉+200ml水)约饺子的一半高,盖盖子煮至快要收干时,打开锅盖,撒上葱花白芝麻,水份干后立即起锅享用😋


加了韩国泡菜的猪肉水饺也很棒哦
