黑芝麻阳光面包


材料:

高筋面粉 250g
黑芝麻粉 10g
奶粉 20g
牛奶 130g
细砂糖 30g
盐 3g
全蛋 1 
即溶酵母 3g
牛油 30g


做法:

1.把全部材料加入面包桶/搅拌机除了牛油,揉至光滑有薄膜

2.加入牛油,继续揉至有扩展状态,然后做第一次发酵1小时。

3.用手轻拍面团,排气,分割3团平均份量,揉圆,静置10分钟。

4.杆开每份面团,排气,翻面,然后两边对折,卷起来放入吐司模里发酵大约1小时。(请参考上图)

5.面团发酵9分满后,表面刷上牛奶液。(不刷也行)

6.以160-170度烤30分钟。(如果吐司表面上色了,盖上锡箔纸继续烘烤完成。)

P/S:原食谱是没有加黑芝麻粉。

Black Sesame Sunny Bread

Ingredients:

High Protein Flour 250g
Black Sesame Powder 10g
Milk powder 20g
Fresh milk 130g
Castor sugar 30g
Salt 3g
Egg 1
Instant yeast 3g
Butter 30g

Method:

1.Put everything into bread machine / mixer except butter knead till form a smooth dough. 

2.Add butter and continue kneading to reach windowpane stage. Proof for 1 hour.

3.Degas & divide 3 equal portions, roll into a ball shape rest for 10 mins.

4.Roll flat the dough, degas, flip over, then swiss roll the dough, put into the lightly grease bread tin. Proof for about 1 hour.

5.When the dough reach 90% full of the bread tin, milk brush (or without) on top then bake 160-170 degree Celsius for 30 minutes.

6.Cover the top with a piece of aluminium foil if the bread is turning brown.
