香浓巧克力杯子蛋糕
Double Chocolate Muffins 

香浓的巧克力蛋糕很美味

浓浓的巧克力蛋糕很讨喜


蛋糕面糊表面上放一些巧克力块

把全部材料准备好
Prepare all the ingredients



材料 :-

面粉 125g
无糖可可粉 1 tbsp
泡打粉 1/2 tbsp
苏打粉 1/4 tsp
盐 1/8 tsp
鸡蛋 1
幼糖 85g
脱脂牛奶 125ml (如果没有,就用牛奶+1/2汤匙柠檬汁来代替)
苦甜巧克力 (溶化) 90g
无盐牛油 (溶化) 60g

表面装饰
巧克力切块 50g (烘烤之前放在面糊上)
海盐 (烘烤之后放在蛋糕上)


做法:

1. 可可粉,泡打粉和苏打粉过筛。加盐,放一旁备用。

2. 在干净的钢盆里,用电动打蛋器把鸡蛋和糖打发至蓬松。加入脱脂牛奶,溶化牛油和溶化巧克力,搅拌均匀。

3. 把所有粉类加入面糊里,用低速打至均匀。(不要过度搅拌)然后用夕硅胶刮刀混合均匀即可。

4. 把面糊舀入6至7个纸杯里大约8分满随意放一些巧克力块在蛋糕表面上。如果用蛋糕模具,轻轻抹上薄薄的牛油再倒入面糊即可。

5. 以175度烘烤 25-30分钟。

6. 如果喜欢,出炉后在表面撒上海盐。





Double Chocolate Muffins

Ingredients :-

Plain Flour 125g
Unsweetened Cocoa Powder 1 tbsp
Baking Powder 1/2 tbsp
Baking Soda 1/4 tsp
Salt 1/8 tsp
Egg 1
Castor sugar 85g
Buttermilk 125ml (can substitute with milk + 1/2 tbsp of lemon juice)
Bittersweet Chocolate, Melted 90g
Unsalted Butter, Melted 60g

Topping
Chocolate Bar, coarsely chopped 50g
Flaked Sea Salt to sprinkle (optional)


Method:

1. Sift flour, cocoa powder, baking powder and baking soda in a bowl. Add salt and set aside.

2. Beat egg and castor sugar in a mixing bowl until light n fluffy. Add buttermilk, melted butter & melted chocolate,  beat until evenly mixed in. 

3. All the powder mixture in, and beat at low speed, until just incorporated. (Do not over mix) Remove mixing bowl and fold with spatula. 

4. Line a standard 6-7 cup muffin pan & grease the top surface of the pan. Or using muffin paper cup. (optional)

5. Use ice cream scoop or spoon, fill each 80% full of the cup.  

6. Place chunks of chocolate on top of each muffin batter. 

7. Bake at 175C for 25-30 minutes or do the skewer test.

8. After baking, sprinkle flaked salt on top of the muffins, if you like. 


P/S: To yield a better flavor of your cake, a good quality of chocolate powder and chocolate bar are needed.
